• Dough食谱/Recipe:
  • 普通面粉/Plain Flour 250g
  • 牛油/butter 1tbsp
  • 清水/Water 130g
  • 盐/Salt 1tsp
  • 糖/Sugar 1/2tbsp
  • 蛋/Egg 1pc
  • **********
  • Dhal Curry/ 杂豆汤
  • A) 绿豆瓣/Yellow Split Peas 200g
  • 小葱头/Shallot 3pcs
  • 蒜头/Garlic 1tbsp
  • 大葱/Onion 1pc
  • 番茄/Tomato 1pc
  • 萝卜/Carrot 1pc
  • 马铃薯/Potato 1pc
  • 四季豆/French Bean 10pcs
  • 清水/water 1.5ltr
  • B)调味/Seasoning
  • 盐/Salt 适量to taste
  • 印度香料/Garam Masala 1tsp
  • 黄姜粉/Turmeric Powder 1tbsp
  • 孜然籽/Cumin Seed 2tsp

前几天跟马来西亚的好友聊天

聊着聊着我问她为何那么迟还没睡啊

她说在等宵夜咯

唉!不问还好问了我的贪吃隐又来咯

她说就roti canai 咯

真的很羡慕啊

在这里想吃个热腾腾的印度煎饼不容易

印度餐馆很像都比较流行吃Naan

不是我的菜咧

之前听说唐人街有间马来餐厅有售卖新鲜印度煎饼哦

不过不是每天都有的

可是啊每次我去唐人街的时候当然把握机会吃别的啦

压根没想过吃印度煎饼

在这之前其实也不错啦

至少可以在Asda 买到冷冻的印度煎饼

想了想也有好阵子没吃咯

我的那位好友啊竟然跟我说你想吃啊

不如自己做吧

就这样这个一直在我的to-do list 的一道美食

最后决定用厨房角落家所分享Oh Bin 的食谱

至于那个curry 当然还是要煮我在马来西亚每次吃roti canai 必点的Dhal Curry 啦

这个Dhal curry 也是看了好几个食谱哦

最后就来个mixed 吧 有参考Jamie Oliver + Nasi Lemak Lover 的食谱

一道我爱的Dhal Curry 就这样出炉了哦

印度煎饼 Roti Canai 做法/Step

1. 把以上材料用mixer 搅拌成不粘手光滑的面团即可。

Beat all ingredient with mixer till it become a smooth and non sticky dough.

2. 取出分割成6小球然后在表面涂抹一层油再放在一个涂了薄油的盘子,盖好保鲜膜静置6小时或隔夜。

Divide the dough into 6 portion and roll it into a ball shape and apply a thin layer of oil on the ball. Place it in a lightly greased pan and cover with cling film and leave aside at least 6hours or overnight.

3. 在桌面涂抹一层油然后取一粒面团出来,压开后把面团甩开,越薄越好。

Oil your kneading space. Take one dough and flatten it with palm into a disc size then flip it like a pizza as thin as possible. One hand on top and one hand below like shown in picture. You can use rolling pin to do this job too.

4. 把面皮折成四方形然后放入钢锅(涂一次一层薄油就可以了),中小火煎至金黄即可。

Take the one egde fold into middle and do this three times so it will become a square size. Place it on a lightly greased pan and cook until golden brown with medium low heat.

杂豆汤 Dhal Curry

1. 绿豆瓣预先浸水至少2小时或更长后沥干备用。

Soak yellow split peas at least 2hours or longer then drained it.

2.全部蔬菜类切丁备用,四季豆切对半就好。 取一锅子加入2tbp 食油爆香蒜头,小葱头及大葱。 加入孜然籽稍微翻炒一下就可以将所有材料A 入锅翻炒再倒入清水煮滚后转中火煮1个半小时或绿豆瓣软。间中加入黄姜粉,印度香料及适量盐调味。

Heat oil in a pot, add in sliced shallot, minced garlic and onion stir fry till fragant. Add in cumin seed stir fry for a bit then add in remaining ingredient from A then add in water to boil. Add in turmeric powder, garam masala and salt to taste. Simmer for 1.5hours or until yellow split peas is soft.

This roti canai texture and taste pretty good however my flipping skill really need a lot of improvement. Love to eat this roti canai with Dhal Curry and strongly recommend this recipe to everyone. Look at my little man he finished whole bowl of dhal curry in min. Will try out another roti canai recipe next time hope can achieve the texture I want ^^
